Lars is the Switzerland based CCO of Lallemand, a yeast manufacturer to the worlds wine, beer, bakery and other yeast needing businesses.
Lars, his wife Qi and two children live in Switzerland, and have a winery in Piemonte, producing some very good wines, with some good stories to them.
The interesting part, is that winemaking is very much a traditional work. Typically producers follow traditional techniques passed over generations, making only small changes to improve income. In contrast, Lars is a chemical engineer with great knowledge of yeast and the chemical aspects of winemaking. He is therefore less traditional and more willing to try new techniques, as it is a hobby. Moreover, all his activities are organic
